Meet the Chef
Our mission at Aspen Vail Chef is to provide exceptional hospitality services to residents and visitors of the Rocky Mountain region in colorful Colorado.
Hello, my name is Chef Joshua Applegate and I have gained extensive knowledge in the culinary world to bring you the most memorable experiences possible. I offer cooking classes for individuals or groups to educate people about flavor profiles and nutritional value because the biggest trends in restaurants and hotels has little to do with trendy techniques and unobtainable ingredients, but focusing more on the fact that people simply want to know what they are putting in their bodies and they want to be able to use that information to obtain a more healthy and happy lifestyle. Allow Aspen Vail Chef to open this world to you as it was exposed to me through interactions with seasoned chefs throughout my career and book with us today.
Joshua Applegate
Chef Josh moved to the High Rockies from Western North Carolina in 2007 and began working at The Sonnenalp Hotel where he remained for nearly four years before moving to Lake Tahoe and eventually Las Vegas to work for Chef Thomas Keller at Bouchon in the Venetian Hotel. He gained immeasurable experience working there and brought that back to Vail Colorado to work for The Four Seasons Resort and Residences for the next three years. He then moved to Portland OR and worked at the Paramount Hotel before moving back to Colorado. But this time it was Aspen. Chef Josh worked at The Chefs Club by Food & Wine where he received the opportunity to meet and work with great chefs featured in the publication during the Aspen Food & Wine Classic. Sadly, The Chefs Club closed and Chef Josh went on to become the Chef de Cuisine at the nonprofit Anderson Ranch Arts Center in Snowmass Village, CO. The taste of adventure pursued and Chef Josh went to Alaska and Northern Nevada to work at two different helicopter ski lodges before moving back to Vail, CO to become the Chef De Cuisine at the Grand Hyatt. He now serves the community he loves and continues to provide excellent hospitality throughout the region.
